Gluten-Free Almond Oat Waffles

Easy and healthy waffles are the name of the game today. These are perfect to be topped with fruit, maple syrup, almond butter or yogurt.

1 1/2 cups blanched almond flour

1/2 cup oat flour

 2 large egg (or flax egg)

2 tablespoon cornstarch 

1 tbs. ground flax seed

2 tablespoons grapeseed oil

4 tablespoons maple syrup

2/3 cup buttermilk or almond milk (if using almond milk with 1/2 tsp. vinegar)

2 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon salt

In a large bowl, mix the dry ingredients whisking to remove any lumps and and set aside. Place the liquid ingredients in a separate bowl and mix. Add the liquid ingredients to the dry ingredients, stirring until combined. Let the batter the sit for 5 minutes. Cook on a hot waffle iron, being sure to grease the iron each time.
