An easy recipe for Passover using pantry staples such as dark chocolate, nuts and dried fruits.
Ingredients
10 oz. dark chocolate chips or chopped chocolate (I like 60% cocoa content)
1/2 cup chopped roasted nuts (almonds, pistachios, pecans, or hazelnuts), roasted cocao nibs or pepitas.
1/4 cup dried fruit (dried cherries, dried cranberries, chopped crystallized ginger) or freeze dried berries
1/2 tsp. flaked sea salt.
Line a rimmed baking sheet with parchment paper. Roast nuts in a 350 F. oven for 6-9 minutes until fragrant and lightly browned. Cool and roughly chop.In the meantime, place chopped chocolate in a heat-proof bowl over gently simmering water. Once the chocolate is melted, spread evenly over the parchment lined baking sheet. You want the chocolate evenly spread to 1/4.” Sprinkle the nuts and fruit over the chocolate. Finish with flaky salt. Let the chocolate harden at room temperature for 4-6 hours. Alternately, you can place the baking pan in the freezer for 15 minutes to quickly harden it. Break up into pieces.
