Easy and refreshing and sure sign that spring is coming. Use leftover coffee or cold brew when making the coffee flavored one. If fruit granita is what you are craving, try fresh or frozen strawberries and/or raspberries.
Coffee Granita
Ingredients
3 cups strong coffee or cold brew
1/4 cup maple syrup, honey or sugar
1 tsp. vanilla extract
1/2 tsp. of cinnamon (optional)
Place all the ingredients in a saucepan and warm over medium heat. Once the maple syrup (or sweetener of your choice) is dissolved. Take pan off heat and cool until warm or room temp.
Pour the mixture into a shallow baking pan. Freeze for 3-6 hours. Using a fork, lightly scrape into a small crystals. Serve with whipped cream and your favorite cookies.
Fruit
3 cups frozen or fresh berries (stem and chop up strawberries)
1/2 cup sugar
1/2 cup water
handful of mint leaves (optional)
juice of 1 lime
Place the sugar, water, and mint in a saucepan over medium. Heat until the sugar is dissolved.
Place the berries in a blender, add the warm mint syrup and puree until smooth. Pour through a mesh strainer into a shallow baking pan. Freeze 3-6 hours. Scrape into crystals using a fork. Enjoy.
